Veggie Burgers with Sesame Cole Slaw

Here’s an easy way to dress up a Made by Lukas veggie burger for your next barbecue.

Serves 4
Prep and cook time: 30 minutes

4 cups shredded cabbage
2 tablespoons apple cider vinegar
3/4 teaspoon salt
2 scallions, white and green parts, sliced thinly
1 tablespoon toasted black or white sesame seeds
1 tablespoon olive oil
1-1/2 teaspoons toasted sesame oil
1 teaspoon sugar
1/2 teaspoon freshly grated ginger
1/4 teaspoon red pepper flakes
Several grinds black pepper
1 package Made by Lukas Veggie Burgers, shaped into 4 patties
4 tablespoons mayonnaise or vegan substitute
4 hamburger buns
Oil for brushing buns (optional)

1. Combine the cabbage, vinegar, and salt in a large bowl and let stand for 15 minutes. Gently press the cabbage against the side of the bowl to extract any liquid. Discard the liquid.  Add the scallions, sesame seeds, olive oil, sesame oil, sugar, ginger, pepper flakes, and black pepper to the cabbage. Toss well and taste, adding additional salt or sugar as needed.

2. Prepare a skillet, the oven, or grill, and cook the patties according to Made by Lukas cooking instructions.

3. If you wish to toast your burger buns, brush them lightly with the olive oil, then place face up in a preheated 400-degree oven, or place face down on the hot grill or griddle, just until crisp—1 to 3 minutes.

4. Spread the buns with mayonnaise. Serve each burger on the bun with a mound of the coleslaw.
