This is an easy weeknight meal: a veggie-burger version of “meatballs in tomato sauce.”
Prep and cook time: 30 minutes
1 package Made by Lukas Veggie Burgers
2 tablespoons olive oil, plus additional for drizzling
2 cups homemade or store-bought tomato sauce
3 cups baby arugula or spinach
1. Preheat the oven to 425 degrees Fahrenheit.
2. Use a tablespoon to scoop the veggie burger mixture into round, golf-ball sized veggie burger bites. You should get 8 to 10 of them. Pour the oil into a baking or oven-safe skillet. Roll the burger bites in the oil to coat, then arrange them in a single layer. Bake for 20 minutes, flipping them halfway through.
3. Meanwhile, heat the tomato sauce on the stovetop or in the microwave.
4. To serve, divide the veggie burger bites on 4 plates and spoon a bit of the sauce over them. Top with the greens, then drizzle a bit more olive oil over each plate. Serve hot.
