Kimchi, so distinctivly tangy, is a great condiment on a veggie burger, and by stir-frying it and adding toasted sesame oil, its flavor becomes even more complex. Many versions of store-bought kimchi contain fish products—be sure to read the label carefully depending on your dietary restrictions.
Makes 1/2 cup
1/2 cup coarsely chopped vegetarian kimchi (see headnote)
1 tablespoon neutral oil
1 tablespoon toasted sesame oil
1 teaspoon toasted sesame seeds
Heat 1 tablespoon of vegetable oil in a sauté pan. Add kimchi and pan-fry on medium high heat for 3 to 4 minutes or when slightly translucent and browned on the edges. Remove from heat and drizzle with the sesame oil. Transfer to small serving bowl and before serving, garnish with the sesame seeds.
