Cook up a bunch of Veggie Burger bites or balls and keep them on hand for snacks and meals throughout the week. Here they're a hearty boost in a fresh vegetable bowl—and don't skimp on the rich, spicy peanut dressing!
2-3 tablespoons Red Curry Coconut Peanut Sauce
3 handfuls salad greens
Toppings of choice: halved cherry tomatoes, sliced bell pepper, cucumber, mushrooms, onions, toasted nuts
4-6 veggie burger balls or bites
Place the peanut sauce in a small bowl, and whisk in water by the teaspoon until you have a smooth, pourable consistency.
Place the greens in the bottom of a large bowl or rimmed plate, then arrange the remaining toppings and veggie burger balls/bites on top. Drizzle with the thinned sauce.
